The Recreation Africa group is pleased to announce that its flagship venue, Misty Hills Country Hotel, Conference Centre & Spa, has opened its new reception on Saturday 24th May, 2014. Last year in June the hotel’s reception was ravaged by fire, and the CEO, Mrs Adele Forsyth, mustered her team and had a temporary reception up and working by the end of that day.

Architect Nico Wessels was commissioned to redesign the reception building and come up with a concept that would be both breath-taking and trend-setting. The finished product is truly spectacular.

Misty Hills Hotel Conference Centre & Spa New Chef 

Our Indian chef, Mr Shabbir Ahmed, from New Delhi, has arrived!

He has been sent to us by our friends at ITC to help us develop Indian cuisine in the group.

The plan is to add a Biryani dish to the Carnivore, which will be served like we do the chicken livers, and will be made with venison.

We also want to add one or two curries to our buffets, and to do a curry night at Misty Hills on Saturday nights.

For a number of years now, Robert Forsyth and Timothy George have been developing a relationship and friendship with the hierarchy of ITC Hotels in
India. ITC is an iconic Indian company and their hotel division is
renowned for its food. They are owners of the famous Bukhara brand of restaurants which has spawned copies worldwide, even here in South Africa.

We asked our friends to send us a chef to train our staff in Indian cuisine and we are grateful that they identified Chef Ahmed and have worked tirelessly with us to get him a visa to come to South Africa.

In January 2014 Adele and Robert Forsyth were in New Delhi and Chef Ahmed prepared a tasting for us.

The meal was truly glorious and the menu is attached. We look forward to serving you some wonderful Indian feasts at Misty Hills.

Thursday night is going to be Indian Night; there will be curry dishes on every buffet and Sunday brunch will feature a number of Indian delicacies.

Chef Ahmed will also be available to supervise and cookfor Indian weddings.

LEG OF WARTHOG

-Ina Paarman Recipe

Ingredients:
2 1/2 tsp Garlic & Herb Seasoning
1 tsp Ground Cloves
5 tsp Vegetable Stock Powder
5 tsp Seasoned Sea Salt
1 tsp Ground Ginger
Black Pepper
500g Rind-less Streaky Bacon
1 Leg of Warthog
Peel of 1 Naartjie 
1/2 cup Apple Juice
1/2 cup Coca-Cola
4 tbs Marmalade

Method:
Mix together all the dry ingredients and roll the streaky bacon in the seasoning.
Lard the warthog leg first with a piece of naartjie peel and then with the seasoned bacon.
Place the leg in the apple juice and marinate for 24hours in the fridge.
When ready to cook, preheat the oven to 160 degrees Celsius
Place the leg with the apple juice in a heavy based saucepan and add the Coca-Cola.
Cover the lid and bake slowly for about 4 hours until tender and cooked. 
(The time may vary depending on the size of the leg.)
Baste the leg from time to time with the gravy until the leg is nicely browned.
Spread the marmalade over the leg and return it to the oven, without the lid.
Increase the heat to 200 degrees Celsius and roast for another 20-30 minute to brown.

(Alternatively use an ordinary leg of pork and prepare in the same wayor use an Impala leg and use lemon and herb basting instead of theapple marinade.)
